This lavish cocktail is a sweet and modern representation of Brazil, winning the 2018 Patrón Perfectionists Cocktail Competition.
Recipe Ingredients
2 oz | Patrón Añejo |
1 oz | Antica formula* |
+ | 1 Bar spoon roasted cocoa bitter** |
+ | Spray of Patrón XO Cafe |
+ | Latin gold powder rim*** |
60 ml | Patrón Añejo |
30 ml | Antica formula* |
+ | 1 Bar spoon roasted cocoa bitter** |
+ | Spray of Patrón XO Cafe |
+ | Latin gold powder rim*** |
Unless noted, drinks should be made one at a time.
How to Make
- Add all ingredients to a mixing glass, add ice and stir quickly.
- Strain into a coupe prepared with a spray of Patrón XO Cafe and to attach the Latin gold powder rim.
*Antica formula (Vermouth fortified with cachaça aged on Amburana wood):
For 3.5 oz of Antica Formula, use .75 oz of cachaca aged on Amburana wood. Mix both ingredients with a hand mixer for a minute. Put into a hermetic pot and store refrigerated.
**Roasted cocoa bitter:
Use 1 part of nibs for 1 equal part vodka (approximately 40% abv). Put the ingredients in a hermetic pot. Let it infuse for 24 hours, shaking periodically. Strain before use.
***Latin gold powder (a mix of cocoa, dried peppers and salt flower):
- 4 Tbsp Callebaut 100% cocoa powder
- 4 Bar spoons Chocolate powder 50% cocoa
- 1/2 tsp Ground and sifted allspice pepper
- 1/4 Coffee spoon of ground and sifted black pepper
- 2 Pinches salt flower
Grind both peppers and the salt flower in a Thermomix/Bimby and sift. Add all the ingredients to a hermetic pot and mix until well blended.
