What a week! And Sunday was no exception, ending London Cocktail Week on a high note as Roberto Berdecia and Leslie Cofresí took their turn tending Patrón Cocktail Lab in Spitalfields Market. Both bartenders and co-owners of La Factoria in Puerto Rico, they treated guests to Mercado Romas. Spicy, citrusy and made with Patrón Silver, the cocktail was inspired by a trip Roberto took to Mexico City. The drink reflects a story of discovering the bond that both Puerto Rico and Mexico share through a love of similar ingredients.
To infuse some flavor from their hometown, the cocktail included a pineapple ancho shrub – an intriguing mix of pineapple juice, sugar, white wine vinegar and chipotle paste - which happens to be a specialty at their bar in San Juan.
And with that, London Cocktail Week is a wrap. A special thanks to our bartenders and friends who visited Patrón Cocktail Lab and made it a year to remember. Cheerio, dear London, until we meet (and toast!) again.
