Australia’s 2018 Patrón Perfectionists winner is a tiki creation inspired by the mythological creature of the same name.
Recipe Ingredients
| 1 oz | Patrón Silver |
| .5 oz | Patrón Reposado |
| 1 oz | Lime juice |
| 1 oz | Simple syrup |
| .75 oz | Quandong Curacao* |
| .25 oz | Native finger lime puree** |
| 30 ml | Patrón Silver |
| 15 ml | Patrón Reposado |
| 30 ml | Lime juice |
| 30 ml | Simple syrup |
| 20.4 ml | Quandong Curacao* |
| 7.5 ml | Native finger lime puree** |
Unless noted, drinks should be made one at a time.
How to Make
- Add all ingredients to a cocktail tin with ice.
- Shake to chill and combine.
- Double strain into stemless wine glass.
- Add 1.5-inch large format ice cube (if available). Otherwise, use 3 standard cubes.
- Top with native finger lime foam and garnish with finger lime caviar and zest.
*Quandong Curacao
- 1 x 23 oz Orange Curacao
- 3.5 oz Quandong
- 3.5 oz Riberry
Add quandong and riberry to curacao and allow to steep for 24 – 48 hours. Curacao should change from light orange to deep pink and should take on the flavor of quandong.
**Native finger lime puree
- 8 oz Finger lime
- 3 – 6 oz Simple syrup
- 5 – 1 oz Coco Real

Squeeze finger lime caviar into high speed blender. Add simple syrup and Coco Real to taste and blend. Strain through fine paper filter. Reserve pulp. Use 4 oz of strained liquid with 12 egg whites in cream gun. Use 2 cream charge canisters. Shake and chill before use.
