See moreThe Perfectionists Spain competition saw a lot of unique drinks and plenty of talented bartenders on hand, including runner-up Fernando Fastuca. His spirited cocktail, El Pacto features Patrón Reposado and was inspired by the craft ideology Patrón uses in creating tequila – from using pineapple syrup to reflect agave juice extracted from piñas to a Patrón cork garnished on the open vintage glass. A smoking machine created an additional dramatic flair during presentation but there was no cloudiness in judgement when it came to presenting the cocktail with its rightful place in Perfectionists history. El Pacto
- 1.5 oz Patrón Reposado
- .75 oz Martini Rubino
- .75 oz Almibar Syrup roast pineapple*
- 1 dash Chile liquor Ancho Reyes macerated with canela and green cardamom
- Mix in a glass.
- Pour and serve in an “open vintage wine glass” with a ball ice inside.
- Place Patrón cork on the edge of the glass.
- Use a smoking machine for presentation.
*Syrup
21 oz Natural pineapple
6.7 oz Agave syrup
6.7 oz Mineral water
8 Dashes chocolate bitters
- Remove the pineapple peel and cut into small triangles.
- Heat the oven for 10 minutes and cook the pineapple at 150° for 1 hour or until golden brown on both sides.
- Remove from the oven and in a pot, combine the roasted pineapple with the mineral water and the agave syrup.
- Once boiling, turn off heat and let stand for 3 hours.
- Grind and then paste with a superbag or strainer making sure there is nothing solid or leftover.
- Once well cast, add the chocolate bitters.
- Store in a glass bottle and keep refrigerated.
