The winning Mexico Perfectionist mixed up the competition in Mexico City.

Homegrown flavors and a home court advantage were a winning combination at the 2016 Mexico Perfectionists competition. Macario Vazquez was crowned the winner in the ever-inspiring Limantour bar in Mexico City where he shook up a cocktail inspired by his home of Puebla. Patrón Añejo held the starring role with its notes of vanilla, raisin and honey and was complemented by aromatic bitters and an herbaceous, Puebla touch. Finished with a silky egg white foam, Macario’s drink was perfectly elegant from the first sip to the last drop. Congratulations, Macario, your cocktail was nothing short of perfection!
Augurio
- 1.25 oz Patrón Añejo
- .5 oz Ancho Reyes Verde
- .75 oz Natural syrup
- .75 oz Lime juice
- 1 Egg white
- 8 Drops aromatic Mexican bitters
- 1 Branch of pipicha (endemic herb of Puebla)
- In a shaker, combine the egg white, natural syrup, lime juice, Ancho Reyes, bitters, pipicha and finish with the tequila.
- Shake without ice for between 10 and 15 seconds.
- Shake a second time with enough ice to make foam.
- Strain twice over ice into a rocks glass and garnish with pipicha.
