75 ml Grapefruit juice
20 ml MARTINI Bitter
12.5 ml Lime juice
10 ml Raspberry-thyme shrub*
+ Raspberry and thyme sprig for garnish

Unless noted, drinks should be made one at a time.

How to Make

  1. Add ingredients in a mixing tin with ice.
  2. Shake and strain into a rocks glass.
  3. Garnish with raspberry and thyme sprig.

*Raspberry-thyme shrub: In a bowl, combine 2 cups raspberries and 1 cup sugar then muddle together until broken down. Cover and store in the refrigerator to macerate for up to 2 days. In a separate bowl, combine 8 sprigs of thyme and 1 cup apple cider vinegar and allow to infuse for up to 2 days. Using a rubber spatula, press the muddled raspberry mixture through a fine-mesh sieve into a medium bowl. Discard the solids. Strain the vinegar through the same sieve. Pour the syrup and vinegar mixture into a jar and store in the refrigerator for a week before serving.
