4 tsp | Coriander seeds |
2 cups | Demerara sugar |

1320 ml | Whole milk |
750 ml | Orange juice |
510 ml | Lemon juice |
510 ml | Purified water |

Unless noted, drinks should be made one at a time.

For the base:
- Combine fennel, coriander, orange peel, tea, sugar and water in a large pot and boil.
- Remove from heat and allow to cool overnight.
- Strain, add tequila, rum and orange juice.
- Set aside.
Breaking the milk:
- In large pot, bring milk to a boil.
- Remove and “break” the milk by adding lemon juice.
Assemble & serve:
- Immediately pour the broken milk mixture into the base and stir to combine.
- Pour the entire mixture into a large perforated container.
- Use a fine strainer to remove large pieces.
- Use a container lined with a damp cloth or fine strainer to remove the smaller pieces.
- Repeat, pouring the clarified milk punch back over the filter until liquid is clear.
- Pour into a mason jar, seal and refrigerate for up to 2 weeks.
